“You can go through and eat french fries and soda, or you can have steamed veggies, rice and juice,” said Ron Rudebock, director of Dining Services. “It’s as healthy as you want to be.”
Rudebock said the Dining Services works with students, getting their feedback, on what they want served. The goal of the J, the main dining hall, is to provide a variety of options that meet the dietary needs and preferences of the campus’s diverse student population.
Each entrée offers a vegetarian option for vegans and vegetarians. A lot of the vegetarian and vegan options are made from local businesses like Arcata’s Tofu Shop, which produces veggie dogs, tofu kabobs and vegan taquitos. Vegetarian and healthy choices like these are available at each meal. During lunch there is even a, ‘make your own sandwich’ bar, which has organic products from the Campus Center for Appropriate Technology’s (CCAT) garden, among other choices.
“We have an incredible staff who work really hard,” Rudebock said. “They have pride in the product they put out.”
